Masala Cookies


While surfing I came across this recipe  from Ramya's Mane Adige and Namratha’s Finger licking Food. After seeing these cookies  I was tempted to bake this cookies. After long  time iam baking cookies. They are extremely delicious, mild spice and savory! Perfect with cup of coffee or tea as evening snack!IThank you both of you to share such a wonderful recipe:)



Ingredients:
All purpose Flour/Maida-1cup
Unsalted butter-1/2 cup
Sugar-2 tsp
Salt-1 tsp
Baking powder-1/4 tsp
Green Chillies chopped (alter to suit your taste)-5 to6
Yoghurt (plain)-2 tbsp
Curry Leaves chopped into small bits-10
Ginger, grated-1/2pc
Little coriander leaves finely chopped)
 I made little change in this recipe I didn’t addMint Leaves (pudina) , hing.or redchilli powder.. ( Instead of Pudina I added coriander leaves ) Instead of grating chillies I reduce the chillies and ground into coarse paste!.
Method:
Mix the flour with sugar, salt and baking powder,
Cut the butter into cubes and mix it in with the flour using a hand held mixer. It should be a bread crumb consistency, Knead this as much as possible to make a dough.
  Add the Ginger paste + little coriander leaves finely chopped+ green chilliespaste+ cut curry leaves and mix well.
Add 1 tsp of yogurt and mix well. Make sure that the dough is stiff .Add another ½ tsp yogurt only if required. Knead well for another 2-3 minutes and keep aside.
Take a small portion of the dough and roll like a chapathi until it is ¼ inch thick cut into desired shapes with the help of cookie cutter and place on a greased baking tray.
Prick the top with fork and brush with butter on each of them.
Bake for 20 minutes or until golden brown. or until done.
Cool and store in airtight containers.

Sambar Sadam


Sambar sadam :Turdal and Vegetables cooked in Rice with Spices, Since it is cooked with lentils, vegetables and rice and it is nutritious along with dal with veggies . It’s a complete meal .. This rice for sure will tickle the taste buds of all sambar lovers. . It’s more like Bisi Bele bath, but without much of those spices .. we won’t need to prepare any vegetable curry with this. This has become a usual menu in my home. I am a great fan of this rice dish. It tastes great when served hot with papadam .Everyone in my home like this rice. It goes well with raitha ,Papadam and chips. I am sure anyone who had tried it would definitely love to have it.

Ingredients :
Raw Rice - 1 cup
Toor dal - 1/2 cup
Tamarind - small lemon sized ball
Pearl onions -15
Beans - 4-5
Carrot - 2
Potato - 2
Peas – handful
Brinjals - 4-5 nos
drumstick(cut into small pieces)-1
Radish – 1
Onion -1
green chillies (slit lengthwise)-2
Sambar powder- 1tsp
Turmeric powder - 1/2tsp
Salt - To taste.
Water - 4cups'

Masala for Grinding (fry and dry grind)
Dry coconut-1/2 cup
whole red chillies- 7 no.s ,
coriander seeds-3 tsp,
gram dhal-1 tsp, -
fenugreek seeds- 1/2 tsp
Cloves - 2
Cardamom -1
Khus khus -1 tsp
Heat a tsp of oil, roast the above ingredients, adding coconut at the end. Roast everything till it becomes slightly brown in colour and dry grind it.
For the seasoning:
Mustard -1 tsp
Fenugreek - 1/4 tsp
Curry leaves - little
Asafoetida - 1/4 tsp
 curry leaves-few
Method:

Cut vegetable to cubes.
Cook rice & dal cook with 4  cups of water. Once  cooked Remove from the fire and keep aside
Dry roast the spices as mentioned in the ingredients and dry grind it.
Heat a tbsp of oil and add the ingredients for seasoning. When mustard splutters, add onions, green chilli and sauté till it they become transparent. Then add all the vegetables and sauté for a few more seconds.

Now add tamarind extract, needed salt and the masala powder, sambar powder let it boil well till the veggies cooked and raw flavor goes

Then add cooked dal, cooked rice and 4-5 tsp of ghee and mix well and remove from heat.
Garnish with coriander leaves. Serve hot with papadam & Raitha.

EGGLESS CHOCOLATE MOUSSE & STRAWBERRY CHOCOLATE MOUSSE

How are you? I miss you all and my blogging! We recently moved to a new house and I was so busy with packing and to settle in my new place.. It was so hectic and I couldn't find time to blog. Now we are settled and internet is also back. Now it's time to hop into your blogs to catch up with all those wonderful recipes have missed! Now I am back with Two yummy desserts.EGG LESS CHOCOLATE MOUSSE & STRAWBERRY CHOCOLATE MOUSSE .Delightful combination of dark chocolate and whipped cream  & white chocolate, Strawberry with whipped cream.

 Mousse is a French word meaning "foam". Mousse is a form of creamy dessert typically made from egg and cream in combination with other flavors such as chocolate or with pureed fruit . This method is very easy to make with no eggs added.. It has a sensuous texture, is surprisingly easy to make and delightful to share with a loved one. This is a quick dessert that can be made within 15-20 min.easy to make n serve. The beauty of this dessert is that it is made without using gelatin.

EGGLESS CHOCOLATE MOUSSE 

Ingredients
Dark chocolate-100 gms ( Grated)
Sugar-1/2 cup granulated( add or less according to your taste)
Whipping cream-1 cup

METHOD

  1.Break the chocolate into pieces and melt it, in microwave oven on HIGH for one minute
   2.Stir it as it is melting. 
   3.Meanwhile combine sugar, with the cream and then whip the cream till it is foamy.
   4.When the chocolate is melt, fold it in the whipped cream
   5.Spoon the mixture into the glasses and place the glasses Covered  and refrigerate for a couple of hours. Serve with additional whipped cream, fresh strawberries and/or shaved chocolate.

Strawberry-Chocolate Mousse

"Strawberry chocolate Mousse" is a very simple yet delicious dessert. Its Yummy! Absolutely irresistible! This dessert will definitely tickle your taste buds!!I loved this dessert very much:)
Ingredients
Biscuit crumbs-1cup
Strawberries -  12
 Whipping cream chilled-200 ml
  White chocolate 100 gm
 Strawberries- 4 sliced for garnishing
Powdered Sugar-1 to 2 tbsp(as per taste)
Lime Juice-1 tbsp

Method:
1.In bowl, mix crumbs and butter to blend thoroughly. Press evenly onto bottom
2.Set aside 3-4 strawberries for garnishing and blend the rest into a puree. DO NOT add water while 
lending.
3. Add sugar, lime juice and mix well; Keep aside.
4.Break thewhite  chocolate into pieces and melt it, using just sufficient heat to gently melt it.
5.Meanwhile combine sugar with the cream and then whip the cream till it is foamy.
6.Fold cooled chocolate into whipped cream to blend thoroughly. .
7.Add the 5-6 tbsp white chocolate mousee then f the strawberry puree and mix well.
8. Pour into glass level top. (Points of strawberries might extend above chocolate mixture.) Cover andCool in refrigerator for around 2 hrs. Garnish with remaining strawberry pieces.
