Eggless Multi Grain Cookies


Maida is used in mostly all cakes, cookies and brownies. For a change instead of Maida I used multi  grain powder  to make cookies. It combines the goodness of various grains to give you a healthier and nutritious diet. They are very easy to make and taste delicious. I  Made these Multi grain cookies with goodness of butter, and refreshing Cardamom flavour and pistachio on top makes these cookies more flavorful and cookies are light and crispy. They are great with tea or coffee.

Multigrain powder: Take 50 gm of Ragi, bajra, jowar, channa dal, saboodana , maize,whole wheat grains, and barley . Clean and Dry roast the ingredients except oats and  till nice aroma comes. Remove from heat and let it cool. Combine all ingredients and grind in flour mill. Let the flour cool to room temperature after grinding. Your multigrain flour is now ready. Store it in an air tight container and use when required. you can make Porridge also.



Ingredients-

Multi Grain flour-2 cups

Powdered sugar-1/2 cup

Butterat room temperature-1/2 cup

Baking powder-  1/2tsp

Cardamom powder- 1 tsp

Badam Pistachio flakes for topping. 2 tbsp

Method-

1.Preheat oven to 180 degrees.

2.In a bowl sieve together multi grain flour, baking powder and Cardamom powder.

3.In bowl beat together butter  and powdered sugar till light and creamy.

4.Once done combine dry and wet ingredients and using your hand mix them well, ensure not to knead the dough.

5.Rest the dough for 30 minutes in fridge covered with plastic wrap.

6.Then start taking small portions of the dough between palms shape them like a ball and then press a little between your palms

7.Garnish them with desired Badam pistachio flakes.

8.Place them on baking tray at some distance apart.

9.Bake at 180 degrees for12 to 15 minutes or till you see a light golden crust on top of the cookies.

10.Transfer the cookies carefully on to cooling rack and Cool them completely to room temperature.Store in airtight container.

11.Enjoy these melt in mouth cookies with your cup of tea/Coffee

Eggless Kaju Pista Cookies –(Cashew Pistachio Cookies)



Eggless Kaju Pista Cookies is a delicious snack recipe made with flour, kaju and pista. Kaju Pista Cookies are one of the popular cookies in India. It is famous for the crispy texture.  These scrumptious cookies prepared with pistachios, cashews and flavored with cardamom powder makes a good option with a cup of chai and Perfect for picnic, high tea and kitty parties, this easy snack recipe is loved by kids also perfect for giving as gift! Try it. I made it in huge amt for my daughter family. Everyone loved it! I followed her recipe as it is.

Ingredients:

All purpose flour- 1.5 cups

Cashew powder-1/4th cup

Butter-160 grams

Custard powder- 2 tbsp

Powdered sugar-1/2 cup

Milk(if required)- 2 tsp

Chopped dry fruit(kaju pista)- 1/2 cup

Baking powder-1/2 tsp

Vanilla extract-1/2 tsp

Green cardamom powder-1/2 tsp

Kewda essence-3-4 tsp
 

Method:

1.Take cashews in a mixer jar and grind it into a fine powder. Crush the seeds of cardamom into a fine powder. Grease two baking trays

2.Take melted butter into a big mixing bowl. Add powdered sugar into the butter and whisk it continuously until the mixture turns even and fluffy. Then add both essence and mix well.

3. After that, add cashew powder, green cardamom powder, all purpose flour and baking powder. Knead the dough by adding milk in small portions.

4.Now add chopped dry fruits and mix it well like a dough

5.Divide the dough into two log , wrap into cling film and refrigerate for 2 hours
 

6.Take out the logs  after 2 hours and cut the cookies into 2 inches gap.
 

7.Place the cookies on baking tray and bake for 12 to 15 minutes at 180 degree celcious.

8.Cool it for atleast 15 minutes and Transfer the cookies on a serving plate.

9.  Serve these crispy and mouth-melting cashew pistachio cookies

Eggless Cashew Nut Cookies



This cashew cookies are simply delicious and easy to make with very few ingredients. Cashew nuts have a very special creamy flavor, which manifests very pleasingly in the cookie too. Plus, the coarse cashew powder also gives the cookie a melt-in-the-mouth texture that is unbeatable. This delectable combination of cashew nuts and melted butter is enough to make you drool and go perfect with a cup of tea.

Ingredients:
All purpose flour/Maida - 1 1/2 cup
Sugar - 1/2 cup
Baking powder - 1/2 tsp
Unsalted butter -  1/2 cup
Coarsely ground cashew nuts - 1/2 cup
Chopped cashew nuts - 1/4 cup 
Vanilla essence - 1/2 tsp

 
Method:
1.Grind the 1/2 cup nuts using a blender into a course powder., put these to the side in a separate dish.
2.In a medium bowl, whisk together flour, baking powder and ground cashewnuts  powder until thoroughly incorporated.
3.In a large mixing bowl, cream together butter and sugar until light and fluffy. Add vanilla beating until completely combined.
4.Add the dry ingredients and mix just until combined then Add chopped cashew bits and mix well.
5.Fold through until it forms a stiff dough Take a small portion of dough, shape it into balls
6. Preheat oven to 180 deg C. Bake until lightly golden and just lightly browned around the edges, about 15-18minutes.
7.Once the cookies are cool, store them in an airtight container.

Eggless Fruit n Nuts Cookies

Fruit n Nuts Cookies
These cookies are tasty and colorful and full of flavor from the fruit and nuts. Fruit n nuts Cookies are a real treat for their luscious taste and spellbinding aroma and perfect choice for the holiday season.  These soft, colorful cookies are a nice addition to a Christmas dessert tray.

Ingredients:
All Purpose Flour - 1 cup
Unsalted Butter -1/2 cup
Powdered Sugar -  1/2 cup
Tutti Frutti - 1/3 cup
Milk - 1 to 2 tbsp
Dates- 1/4 cup coarsely chopped
Cherries-1/4cup
Toasted walnuts,Cashew  - 1/4cup coarsely chopped
 
(I used a combination of raisins, dates,dried cherries//walnuts &cashews)

Method:
1.   In a mixing bowl add powdered sugar and butter. Cream butter and sugar until light and fluffy - Add maida, tutti frutti , dried fruit and nuts and mix well.
2.   Add milk to form a soft sticky dough. Lay a butter paper and roll the dough and form a log(dust flour if needed).
3. Divide the dough in half and place each half and Wrap it with butter paper  Roll each log in the butter paper and  Put it up in the freezer to make the dough firm for 30 to 40 min.
4.Cut log into slices or cut it with a cookie cutter and Bake it at 180 deg C for 10 to 12 minutes or until the edges are slightly golden brown. Transfer carefully in a rack and cool it.Store in airtight container.

Fresh Ginger-Lemon &Honey Cookies



The Fresh lemon ginger cookies are treats those who like sour, sugary, tangy with spice.I love ginger, lemon& honey. Honey and lemon is always so soothing and the lemon and ginger really shone through and complemented each other well ;and in these cookies the honey was delicately lingering in the background... Well to be honest the ginger cookies turned out soft and lovely balance of crispy and chewy and full of ginger & lemon aroma with spicy flavor. 

 

Ingredients:
All Purpose flower- 200 gms
Butter-115 gms
Powdered Sugar- ½ cup
Brownsugar- ½ cup
Baking Powder- 1 tsp
Baking soda- ½ tsp
Honey – 2 tbsp
Lemon zest -2 tsp
Fresh lemon juice -1tsp
Ground ginger-1tbsp
Cardamom- ½ tsp

 
Method:
1.Preheat oven to 180°C.
2.Add the flour, baking powder, ginger, baking soda and mix until well combined.
3.Cream the butter together with the sugar and honey until light and fluffy.
4.Grate in the lemon zest and finely chop the ginger and add to the bowl along with the lemon juice and ground ginger.
 
5.Add the flour and beat together until all incorporated. knead to a smooth dough.
6.Flatten then slightly using the palm of your hand and place on the baking tray.
7.Bake in the oven for 12-14 minutes until they are golden brown in colour.
8.Allow to cool before storing in an airtight container.Enjoy with Hot Tea or Coffee.
