Corn & Sooji Balls



A mixture of corn kernels, cottage cheese and semolina shaped into balls and deep fried. Combine corn with coriander and paneer, together makes them so nutritious and delicious and appetizing starter or you can have this as a teatime snack. . . Ideal for all age groups. . . It is worth a try!

Ingredients:
Sweet corn -1/4 cup boiled
Ravva -1/4 cup
Milk -1/2 cup
Paneer- 1/2 cup crumbled
Coriander leaves-1tbsp
Ginger-1/2tsp
Redchillipowder -1/4 tbsp
Chat masala powder -1/2 tbsp
Lemon juice -2 tbsp
Maida -1/4 cup
Bread crumbs -1/2 cup
Oil for deep frying


Method:
1.Dry roast rava/sooji with nonstick kadai till rava gets fragrant. Then Add milk and stir briskly and cook till dry and Set aside to cool.
2.I4n the rava mixture Add paneer,sweet corn,salt,ginger,redchilli powder,chat masala powder,coriander leaves and lemon juice.
3.Prepare this mixture into 8 equal parts and shape them into balls.Mix maida and water and mix well to form a thick batter and keep it aside.(the batter should not be too thin, it should be slightly thick )
 
4.Dip the balls one by one in the flour mixture and roll each in breadcrumbs. So that it is evenly and thickly coated.
5.Heat oil in a pan and  Gently slide the balls into the hot oil few at a time and deep fry them till golden brown. Serve them with Tomato sauce or ketchup.

Corn Capsicum Masala

I was doing my regular grocery shopping and my eyes spotted fresh corn. Corn curry - a dish that I make only so often, I wanted to make something else different. Inspiration and came up from sanjeev kapoor’s khana khazanna. At home, I tried this Corn capsicum Masala came up with a totally different curry that tasted yummy as well...This go along withplain rice& chappathi

Ingredients

Corn kernels- 2 cups

Capsicum(diced into 1cm cubes)- 3 medium size

Onion(chopped) -3 medium size

Tomatoes(chopped finely) -2 medium size

Coriander leaves(chopped)- ¼ cup

Cumin seeds ½ tsp.

Ginger-garlic paste -2 tbsps.

Red chili powder -1 tsp.

Coriander powder- 1 tbsp

Cumin powder -1 tsp.

Turmeric powder ½ tsp.

Garam masala powder- 1 tsp.

Fresh cream-¼ cup

Mawa(khoya)- ½ cup

Oil -3 tbsps.

Salt to taste

Method :

1.Boil the corn in water, once cooked drain water and keep aside.

2.Heat oil in a kadhai. Add cumin seeds, when it starts crackling, Add ginger garlic paste and cook for 2-3 minutes.add chopped onions and cook till golden brown.

3.Add chopped onions and cook till golden brown Then add red chili powder, cumin powder, coriander powder and turmeric powder. Stir fry for a minute.

4.Add chopped tomatoes and cook till oil leaves the masala, continuously keep stirring.

5.Add mawa and half cup of water and mix and cook for a minute.

6.Add diced capsicum and mix well. Finally add boiled corn, garam masala powder and salt. Mix and cook on low fire for 4-5 minutes.

7.Stir in cream and chopped coriander and serve hot.


Tips To reduce the calories, reduce the mawa and cream. Use a little milk instead.
