Eggless Pistachio, Saffron and Cardamom Cake


Eggless Pistachio, Saffron and Cardamom Cake
For My son in law's birthday  I was looking for an easy to bake and yet a fancy cake recipe.  While browsing recipe ideas for the same, I noticed that Saffron  pistachio cake is quite famous. It looked exotic and elegant. This Moist and delicious cake infused with saffron ,cardamom flavor with a chopped pistachio. The richness of the Pistachios coupled with the delicate saffron just melts in your mouth. The cake turns out moist, flavourful and delicious. It is very festive in appearance It is rich in taste and flavour.
 
Ingredients
Flour (Maida) - 1 cup
Powdered Sugar - 2 tbsp
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
 Condensed Milk - 200g
 Butter - 100g
Pistachio Powder - 50 g
Milk- 1/2 cup
 Vanilla Essence - 1 tsp
Saffron & Cardamom - 1/2 tsp each
For Icing:
Whipped Cream (chilled) - 2 cups
Vanilla Essence - 1 tsp
 
 Method:

1.Preheat the oven at 180deg C.Grease a bakingpan.
2.In a bowl sieve maida, 2 tbsp sugar, baking soda, baking powder and keep aside.
3.Take a large bowl, add butter, condensed milk, Pistachio powder,cardamom, vanilla extract and  saffron milk mix together and whisk for 2 minutes to form a smooth batter.
4.Using a spatula, fold dry ingredients to the whisked batter and mix well. Mix till well combined.
5.Pour the batter into the baking pan and bake for 20 minutes.
 
6.After 20 minutes, poke a toothpick into the centre of the cake and remove instantly. If the toothpick comes out clean, it means the cake is cooked completely.
Remove the cake from the oven and keep on a cooling rack for 10-15 minutes.
 
Make theFrosting:
1.  Using both a chilled bowl and chilled beaters, beat the cream until frothy.
 2. Add the icing sugar and vanilla gradually while beating.
  3.Whip until light and a thick enough consistency to spread as an icing.
  4.Decorate with Pistachio Powder and pinch of saffron

Eggless Mango Chocolate Chip Mug Cake




I have baked some mango cakes before, like the 5 MinuteChocolate Cake in a Cup eggless mango cake and mango marble cake.This Today's recipe is very quick and delicious Mango cake in less than 2 minutes. This recipe looked pretty interesting. Yes, seriously This cake in a coffee mug that cooks in the micro in just 2 minutes. you can enjoy this super soft n yummy cake instantly with very less and basic ingredients along with some Mango pulp I made some changes in this recipe I didn’t use egg then instead of oil I used unsalted butter. It turns out good. My children loved it!.

Ingredients

All Purpose flour -  4 tbsp

Sugar-3tbsp       

Baking Powder  -  1/2 tsp

Baking Soda-    1/4 tsp

Mango Puree -  3 tbsp

UnsaltedButter  -1 tbsp

Milk -   4 tbsp

Vanilla Extract  -2-3 drops

Chocolate Chips  -  1tbsp
Method:

1.In a mixing bowl, Sift All-purpose flour, salt, baking powder & baking soda together and keep aside.

2.In a another bowl, add Mango Puree,milk,butter vanilla extract and sugar mix everything well.

3. Now add the flour mixture to it and mix gently. Fold in 1/2 tablespoon of the chocolate chips into the batter and reserve the other half.

4.Spoon this batter in a microwave safe mug, gently tap the mug for the batter to settle. 5.Sprinkle the other half of the chocolate chips on top

6.Place it in the microwave and cook for 1 minute on high. Remove, tap it lightly and put it back for 30 seconds more.

7.Let it remain for a minute inside and serve immediately after. Enjoy delicious   soft mug mango cake! Better when served warm right out of the oven!

Fresh Fruit Gateau



Fruit Cake is one of the most popular desserts which have tantalized the taste palates. Fresh Fruit gateau made with light fluffy vanila sponge cake soaked in orange syrup, filled with fresh seasonal fruits and topped with whipped cream Fruit& Garnished with delicious chocolate curls.I made this cake for my Hubby's Birthday-who is very fond of dessert sand cakes. The lip-smacking bite of this cake turned out extremely soft, light and fluffy. It is a refreshing and absolutely delectable cake.



Vanila  Sponge Cake: Here
 
For Whipped Cream Frosting:
Heavy whipping cream - 2 cup
Vanilla Essence - 1/2 teaspoon
Icing Sugar - 1/2 cup
Soaking syrup
Sugar-2 tbsp
Orange Juice- 1/4 cup
For the filling:
1 cup sliced mixed fruits( Fruit of your choice)
For the garnish
a few fruit slices
Dark Chocolate Curls
 
Method
For the Whipped Cream
  Combine the cream, sugar and vanilla essence in a clean and dry bowl and whisk till soft peaks form.   Keep refrigerated till required.
Chocolate curls:
1.Use a block or large piece of chocolatebar.
2. Make sure the chocolate is slightly warmer than room temperature.
If making curls from a solid 2-inch chunk of chocolate, place it on a microwaveable plate and microwave it on low power for 5-second intervals until it is barely warm.
3. Use a vegetable peeler to make chocolate curls. Just run it over the edge of your chocolate. . For narrower curls, use the side of the bar.
4.Lift any curls with a wooden skewer to avoid making fingerprints in the chocolate. Use immediately or place a single layer on paper towels in a storage container. Cover and store at room temperature orRefrigerate the curls until ready to use.
Method:
1.Once the cake is ready allow it to cool for some time.
2.Then Slice the cake horizontally into 2 equal layers and divide the cream into 2 equal portions.
 3.Sprinkle the bottom layer of the sponge cake with ½ the soaking syrup.
4.Spread one portion of the whipped cream on the soaked layer of sponge.
5.Top with half the fruits and place another layer of sponge on it
6.  Sprinkle some more soaking syrup and then spread another portion of the whipped cream over this layer.
7.  Garnish with the fruits and chocolate curls and refrigerate for2 hrs. Fresh fruit cake is ready to serve. Serve chilled.
