Banana Dosa



Banana Dosa
Last week we had an opportunity of tasting different cuisine  in Southern Spice’ located at Taj Coromandel, Chennai. Among different cuisine  the ‘Banana Dosa’ which was the signature recipe of "Southern Spice". Soft bananas amazingly battered up and deep fried with, ghee flavours of jaggery and cardamom. An interesting sweet treat, which will be loved by all ages. We liked it so much I  could not resist asking the chef for the  Recipe. Yesterday I tried at home.
Ingredients:
Maida- 125 gm
Rice Flour- 25 gms
Jaggery -200 gms
Banana-4
Ghee-1/2 cup
Cardamom powder-1 tsp

Method:
1.Pour water in a pan and bring it to boil. Add jaggery and let it dissolve then Filter the Jaggery water.
2. Peel the skin of the banana and mash it well. Then add the maida, rice flour, cardamom powder and mix well.
3.Along with this mashed banana then add the jaggery water and mix it .(I added jaggery to  ensure that sweetness is according to our taste. You can add or reduce jaggery as desired.)
4.Mix everything to form a smooth batter without lumps. The batter will not be runny, it will be little thick like vada batter.Heat ghee in a pan, once it is hot enough pour a spoon of batter to form small disc. Fry each side till it turns golden brown.
5. Remove from ghee and drain it in tissue paper.
6.The yummy and delicious Banana dosa is ready to be served .Serve hot.

kalkandu sadham (Sugar Candy Rice)

Ingredients
Raw rice-1 cup
Milk-1 cup
Kalkandu-1 cup
Cardamom-4
Kumkumapoo(saffron)-a pinch
Ghee-3 table spoons
Cashew nut-10
Dry grapes-little

Method:

Cook the rice with 1 cup of milk and 2 cups of water in cooker until the rice gets cooked well.Add the powdered kalkandu and cardamom into the rice keeping it in the stove. Kalkandu will make the rice watery. When the rice cools it will become thick. If you feel that it is too watery cook for another 5 minutes. Add the saffron mixed in milk also into the rice. Fry the cashews and grapes in the ghee and mix it with the rice. You can also prepare this using sugar instead of the kalkandu..There is no much difference in the taste of the rice. Delicious kalkandu sadham is ready.




Sarkaraipongal (A sweet made using jaggery)

Rice -1cup

Moongdal 1/4 cup

Jaggery 1 and 1/2 cups.

Ghee 2 tablespoons.

Cardamom 2 nos (powdered).

Cashew nuts 6 pieces.

Dry grapes 10 nos.

Method

Clean and wash the rice and dal.Cook the rice and dal with milk till they become soft.Take water and jaggery and boil it until it dissolves in water and become thick. Keep stirring continously till the syrup forms a thread when dropped. Mash the cooked rice adding the ghee. Add the mashed rice to the syrup and mix well on a low flame. Cook on a low flame stirring well to blend the pongal for 3 minutes.Add ghee and crushed cardamom and garnish with roasted cashew and dry grapes.if you like to use milk in this recipe, add 1 cup milk while mashing the rice with ghee.The amount of ghee mentioned here is minimum,serve hot.
