Rava Laddoo

Navarathri Golu is one of my favorite Indian festivals where we get to see lots and lots of beautiful dolls. This year I got some help from my children cleaning up the dolls, setting kolu padi, giving manjal kumkumam to friends etc. Yesterday for Neivedyam I prepared Rava laddoo. It is a traditional Indian sweet made from semolina/rava  and sugar and bound together with ghee to form small balls.Everyone make this ladoo in different version. I prepared this laddoo in different way and it just melts in your mouth. Here is my version of this recipe!

Ingredients:
Rava – 1 cup
Powdered Sugar –1 cup (increase as per your sweet buds)
Cardamom Powder–1 tsp
Ghee – 1/4 cup
Cashews – 10 nos
 Raisins – 10 nos
 
Method:
1.Dry roast the rava in a wide pan  till nice aroma arises. Make sure the color of rava doesn’t change.
2.Let it become warm and then grind it to a fine powder in your mixer Make sure there are no granules and sieve it.
3.Mix powdered sugar, rava and cardamom powder.
4.Break cashew into small pieces and fry in a tsp of ghee until golden brown.
5.Add the Melted  ghee little by little at a time and start mixing and cashew nut, raisins  to the ground rava powder and mix well.Stop the ghee when u are able to make a ball.
6.Take a small amount of mixture in your palm, Make small lemon size balls out of it and store in an air tight container.
7.Rava Ladoo is ready to eat.Enjoy this yummy Rava Ladoo.

Vegetable Oats Cutlet



Today evening I prepare an easy oats veggies cutlet which was nutritious and tasty. We enjoyed this delicious cutlet with tomato ketchup. We had a great snack today :)

INGREDIENTS
Oats-1cup +1/4 cups
Potatoes-2 boiled and mashed
Grated cauliflower-¼ cup
Chopped beans--¼ cup
Grated carrot--¼ cup
Red chilli powder-½ tsp
Mixed spices-1tsp
Amchoor-½ tsp
Chopped coriander-1tbsp
Lemon juice-1 tsp
Salt- as per taste
 
Method:
1. Mix all the ingredients (boiled potato, carrot, beans, cauliflower, salt, red chilli powder, coriander leaves, Mixed spices ,mango powder (amchur), and lemon juice) with one cup oats.
2. Mash them together and prepare a mixture for cutlets.
3. Flatten each ball and shape it into shape.
4. Roll the cutlets in the remaining oat flakes
5. Heat 2 tbsp of oil in a frying pan and shallow fry these cutlets on medium heat until they are golden brown and crispy.
6. Serve hot with ketchup or chutney.

Broken Wheat /Lapsi Vegetable Upma



Upma is a complete meal in itself. When you make upma with vegetables, coconut it comfortably gets into the "healthy food". Preparing upma with lapsi/ broken wheat is a great way to include it in our diet. It is an excellent source of fiber and is also low in fat .It is not only healthy but also a filling breakfast recipe. 


Ingredients:
 Lapsi Rawa/Broken wheat rawa – 2 cups (pressure cooked in 4 cups water)
 Onions – 2 nos (medium-sized; finely chopped)
 Mixed vegetables( carrots,beans, ,peas)-1cup
Curry leaves – a sprig; finely chopped
Green Chillies – 2-3
Salt – to taste
 Lime juice (optional) –1 lime
Ghee- 1 tsp
 
For the seasoning
Oil - 1 1/2 tbsp
Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Chana dal- 1/2 tsp
Curry leaves – few
For The Garnish
Chopped coriander (dhania)- 2 tbsp
Fresh grated coconut-1/4 cup
Method:
1.Heat oil in a pressure cooker and add mustard. seeds, when it splutters, add urad dal , channa dal.
2.Then add curry leaves, once it starts to pop add the grated ginger, green chillie,onion and saute till the onions become translucent.
3.Add the green peas, carrot,beans broken wheat and saute for few minutes Then add water, salt and mix well. Close the lid of the cooker and cook it for 1-2 whistles.
4.Once the pressure cooker cools, open the lid and let it cool and set for a few seconds.
5.Tranfer the contents of the cooker to the serving vessel and Add ghee then garnish with ,coriander,grated coconut and lemon juice to it and mix well.
6.The broken wheat/lapsi vegetable upma is ready. Serve it hot with coconut chutney.

Potato Peas Paal kootu


This Paal kootu  is a very simple , delicious authentic side  dish .You can make this dish with any vegetables. But My family loves potato and green peas in coconut milk It has mild sweetness. This recipe is my Mothers special I learn it from her. this Paal kootu is my family's favorite dish!
Ingredients:
  Potato - 4 medium.
 Green peas-   ¼ cup
 Coconut - ½ cup
 Green Chili - 2 small
  Rice - 1 tsp soaked
 Coconut Milk/ Milk - 1/4cup
 Coconut Oil - 2 tbsp
 Mustard seeds- ¼ tsp
Urad dal- ¼ tsp
Curry leaves - as per need


Method:
1. Wash the potato well and peel the skin off.
2. Then cut the potatoes into cubes and cook them well. But don’t mash them.
3. Boil the green peas until peas get cooked.
4.Blend the coconut, green chillies and the soaked rice  to a fine paste.
5.Add the ground mixture and salt to the cooked potatoes and peas.
6. Mix them well and Allow to cook up to 5 mins .
7.Heat oil in a pan, add mustard seed, urad dhal,curry leaves &,When they crackle, add to the kootu.
8.Finally add milk /coconut milk and serve with Rice accompanied by sambhar or Rasam.

Nan Khatai (Indian butter biscuits)


Butter biscuits are always in demand in my family, as these are extremely soft very tasty and would easily melted in mouth. Traditionally this is made with clarified butter or “ghee” These are the best Biscuit/ cookies I have ever tried, which is very simple to make and exceedingly good. It is served with a cup of tea or you can munch in between anytime to feel good. However, I baked these biscuit often but never posted in blog. Yesterday I baked this biscuit for me &my neighbor.
 

Ingredients:
Maida/All purpose flour - 2 cups
Powdered sugar - 1 cup
Ghee/Clarified butter - 3/4 cup
Green Cardamom Powdered – 1 tsp
Baking powder- 1/2tsp
Baking soda - 1/4 tsp
 

Method:
1. In a mixing bowl, combine powdered sugar (little at a time) with the softened butter until mixture is light and creamy.
2. In a separate bowl, sift All Purpose Flour with Baking Powder and Baking soda
3. Combine Flour mixture (little at a time) with Butter Mixture to form a soft dough then add cardamom powder and mix well.
4. Wrap dough in plastic wrap and let it rest for 15-20 minutes.
5. Knead dough once again and Make small balls out of the dough, around the size of a small lemon and slightly flatten them between your palms and place them on a greased baking sheet. Maintain some gap between the cookies.
6. Preheat the oven at 180°C. Bake them for about 15 minutes or until u see small cracks on top. Take the tray out of the oven and wait until the cookies cool completely. Store in an air-tight container.
