Maida Kozhukattai /Fried Modak



Maida Kozhukattai
On the third day of Navarathri I made fried modak / Maida Kozhukattai for prasadam using all purpose flour (Maida). The method of this kozhukattai  is making a stiff dough filling it with the same coconut jaggary fillings. It taste  divine is not just enough to explain the taste. Fried modaks/ Kozhukattai are easy to make and tasty to relish.
 
Ingredients:
For Outer Covering:
All purpose flour-1 cup
A pinch Salt
Water-as needed
Oil for deep frying
For Filling:
Grated jaggery-1/2 cup
Grated coconut-1cup
Cardamom powder-1/2 tsp
Ghee- 1 tsp
Method:
1.Grate only the soft white portion of the coconut. Put the jaggery in a heavy bottomed vessel and add ½ cup water and keep on low flame.
2.When the jaggery completely melted, strain it and put it in a heavy bottomed vessel and allow to boil .
3.Add coconut gratings and Cook till the mixture just starts leaving the sides of the vessel and become solid.
4.Add cardamom powder and & ghee mix well & remove from the heat.
5.Knead Maida into a soft, stretchy dough with water and oil. (knead it into dough just as you do for making chapathis).
6.Take Maida flour dough and make small balls out of it and Press it in your palm and flatten it.
7. Make small ball out of the puran that we had prepared.Place puran in dough and close it in a pyramid shape.
8.While stuffing the puran, Roll the dough into uniform balls,  seal it completely.
9.Deep fry the modaks balls in oil till they turn brown and serve warm.

Rava Laddoo



HAPPY NAVRATHRI TO ALL MY BUDDY BLOGGERS & VISITORS!!!

Navarathri Golu is one of my favorite Indian festivals where we get to see lots and lots of beautiful dolls. This year I got some help from my children cleaning up the dolls, setting kolu padi, giving manjal kumkumam to friends etc. Yesterday for Neivedyam I prepared Rava laddoo. It is a traditional Indian sweet made from semolina/rava  and sugar and bound together with ghee to form small balls.Everyone make this ladoo in different version. I prepared this laddoo in different way and it just melts in your mouth. Here is my version of this recipe!

Ingredients:
Rava – 1 cup
Powdered Sugar –1 cup (increase as per your sweet buds)
Cardamom Powder–1 tsp
Ghee – 1/4 cup
Cashews – 10 nos
 Raisins – 10 nos
 
Method:
1.Dry roast the rava in a wide pan  till nice aroma arises. Make sure the color of rava doesn’t change.
2.Let it become warm and then grind it to a fine powder in your mixer Make sure there are no granules and sieve it.
3.Mix powdered sugar, rava and cardamom powder.
4.Break cashew into small pieces and fry in a tsp of ghee until golden brown.
5.Add the Melted  ghee little by little at a time and start mixing and cashew nut, raisins  to the ground rava powder and mix well.Stop the ghee when u are able to make a ball.
6.Take a small amount of mixture in your palm, Make small lemon size balls out of it and store in an air tight container.
7.Rava Ladoo is ready to eat.Enjoy this yummy Rava Ladoo.

Vegetable Oats Cutlet



Today evening I prepare an easy oats veggies cutlet which was nutritious and tasty. We enjoyed this delicious cutlet with tomato ketchup. We had a great snack today :)

INGREDIENTS
Oats-1cup +1/4 cups
Potatoes-2 boiled and mashed
Grated cauliflower-¼ cup
Chopped beans--¼ cup
Grated carrot--¼ cup
Red chilli powder-½ tsp
Mixed spices-1tsp
Amchoor-½ tsp
Chopped coriander-1tbsp
Lemon juice-1 tsp
Salt- as per taste
 
Method:
1. Mix all the ingredients (boiled potato, carrot, beans, cauliflower, salt, red chilli powder, coriander leaves, Mixed spices ,mango powder (amchur), and lemon juice) with one cup oats.
2. Mash them together and prepare a mixture for cutlets.
3. Flatten each ball and shape it into shape.
4. Roll the cutlets in the remaining oat flakes
5. Heat 2 tbsp of oil in a frying pan and shallow fry these cutlets on medium heat until they are golden brown and crispy.
6. Serve hot with ketchup or chutney.

Broken Wheat /Lapsi Vegetable Upma



Upma is a complete meal in itself. When you make upma with vegetables, coconut it comfortably gets into the "healthy food". Preparing upma with lapsi/ broken wheat is a great way to include it in our diet. It is an excellent source of fiber and is also low in fat .It is not only healthy but also a filling breakfast recipe. 


Ingredients:
 Lapsi Rawa/Broken wheat rawa – 2 cups (pressure cooked in 4 cups water)
 Onions – 2 nos (medium-sized; finely chopped)
 Mixed vegetables( carrots,beans, ,peas)-1cup
Curry leaves – a sprig; finely chopped
Green Chillies – 2-3
Salt – to taste
 Lime juice (optional) –1 lime
Ghee- 1 tsp
 
For the seasoning
Oil - 1 1/2 tbsp
Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Chana dal- 1/2 tsp
Curry leaves – few
For The Garnish
Chopped coriander (dhania)- 2 tbsp
Fresh grated coconut-1/4 cup
Method:
1.Heat oil in a pressure cooker and add mustard. seeds, when it splutters, add urad dal , channa dal.
2.Then add curry leaves, once it starts to pop add the grated ginger, green chillie,onion and saute till the onions become translucent.
3.Add the green peas, carrot,beans broken wheat and saute for few minutes Then add water, salt and mix well. Close the lid of the cooker and cook it for 1-2 whistles.
4.Once the pressure cooker cools, open the lid and let it cool and set for a few seconds.
5.Tranfer the contents of the cooker to the serving vessel and Add ghee then garnish with ,coriander,grated coconut and lemon juice to it and mix well.
6.The broken wheat/lapsi vegetable upma is ready. Serve it hot with coconut chutney.
