Bread Cutlets


Bread Cutlets are scrumptious and made with a mixture of deep fried snack prepared from bread crumbs and boiled vegetables with lip smacking spices. These bread cutlet can be easily prepared in just ten minutes using common ingredients that are found in your pantry. These crunchy vegetable bread cutlets can also be used as patties and can be sandwiched between bread and can be served as a nice evening snack or as an after school snack for kids. Serve hot with tomato ketchup and green chutney.

Ingredients:
Bread slice, brown / white-4
Potatoes, boiled & mashed-2
Onion, finely chopped-1/2cup
Capsicum finely chopped-1/2 cup
Green chilli- 1
Ginger paste-1 tsp
Turmeric - ¼ tsp
Red chilli powder- ½ tsp
Salt to taste
Garam masala powder-½ tsp
Chat masala-½ tsp
Corn flour-1 tbsp
Lemon juice-1 tbsp
Coriander leaves, finely chopped- 2 tbsp
 


Method:
1.Cut off the edges of the bread slices
2.Into a bowl add the bread pieces, potatoes, onion, capcicum, ginger, green chilli, turmeric powder, chilli powder, garam masala, corn flour, salt andsqueeze lemon with coriander leaves.
3.Give everything a good mix and make sure to have a non-sticky dough.
4.Scoop balls from it and make round shaped cutlets greasing hands with oil.
 
5.Deep fry the cutlets in hot oil Fry on medium flame and  stir occasionally without breaking the cutlets..
6.Fry till the cutlets turn golden brown on medium flame. Serve bread cutlet hot with Green chutney and tomato ketchup

Vegetable Sweet Corn Soup

At last I am back on my blog after a long break:-)First of all. Sorry for the long silence. Iam quite busy in front of my personal work and kept me very busy and was not able to sit in front of the system .In between I was not well suffer from severe menopause & high BP. . So it extended my break. It feels great to be back, blogging about what I love most – I Have missed a lot of interesting recipes and events .Will visits all your blogs soon.
This Vegetable Sweet Corn Soup is a very simple soup, suitable for all occasion. This soup can be turned out easily into a huge quantity. This soup was from one of my favorite. Sweet Corn Soup is Made with tender corn kernels, and flavored with green chili and soy sauce, Plain sweet corn soup is somewhat watery by nature...adding the veggies enhanced the substance and taste.
Ingredients
1 cup tender corn kernels
1 carrot, finely chopped
1 tbsp cabbage, chopped
1 spring onion, finely chopped
1/2 tsp sugar
1/2 tsp green chilli sauce
1/2 tsp soya sauce
4 cups water
¾ cup whole sweet corn kernels
¾ cup sweet corn, grated
5 cups clear vegetable stock
3 tablespoons cornflour mixed with ¼ cup water
1 teaspoon sugar (optional)
salt to taste
Butter – 2 tablespoon
 
Method:
1.            Heat butter in a deep sauce pot. Add ginger garlic paste and sauté for few seconds then drop the finely diced onions to it and cook for 2 minutes.
2.Cut all the vegetables into fine pieces.
3.Cook the corn in the pressure cooker for 1 whistle.
4.In the meanwhile grind the fresh corn kernels into a fine paste and add it to the sauce pot.
5. Now add the vegetables and sauté it for few seconds till the vegetables are soft.
6.Add water, salt, pepper, and bring it up to a boil.
7.Blend cornflour in a little vegetable stock or water and set aside. Add sugar and salt to the soup and continue to cook.
8.When it is cooked add 2 cups of water Add the blended cornflour and cook till the soup thickens. Add white pepper powder and mix.
9.Garnish with spring onion greens and serve piping hot. 
Tips: Add more water if required to adjust to desired consistency
While mixing the corn flour mixture keep stirring the soup to avoid lumps.
In the soup add  little chlli sauce and soya sauce and be added while serving.

Green Banana Fry

When I want to cook something quick and yet 'chatpat' that will make simple food delicious this is one thing that comes to my mind. I saw this recepie in one tv cooking show. One can eat it as it is or as a side dish with daal rice,chappati,puri or as a snack in all combinations this tastes yummy :)


Ingredients:

Coriander Powder - 1 Tsp

Cumin Powder - 1 Tsp

Turmeric Powder - ½ Tsp

Red Chilli Powder -½ Tsp

Garam Masala -½ Tsp

Powdered Dried Mango (Amchur Powder) -½ Tsp

Salt to Taste

Gram Flour2 Taste

Chopped Coriander Leaves -1 Cup

Raw Banana -3

Oil -2 Tbsp

Bay Leaf -½


Method:

1.Take Coriander Powder, Cumin Powder, Turmeric Powder And Chilli Powder In A Mixing Bowl.
2.Also Add Hot Spice Mix (garam Masala), Salt, Gram Flour And Chopped Coriander Leaves.
3.Now Coat The Length Wise Chopped Raw Banana Pieces With This Mixture.
4.Heat Oil In A Pan And Roast Bay Leaf.


5.Now Add The Spice Coated Banana Pieces And Cook.
6.Also Add The Remaining Spice Mix, A Little Water And Cook
7.Green Banana Fry Is Ready To Serve
