Baghara Baingan

Baghara Baingan

Baghara baingan is a popular dish from Hyderabad. It is rich gravy of coconut, peanuts and spices cooked along with eggplants. The tiny brinjals are fried and then cooked in delicious gravy made with freshly roasted spices ground to a fine paste lending their unique flavor. Sounds good & tasted great too!


Ingredients:

Baby eggplants-1/2 kg

Onions -2 chopped

Tomato-2

Jeera-1 tsp

Oil-3 tbsp

Turmeric powder-1/4 tsp

Chili powder-1 tsp

Green chilies-3

Salt as per taste

Ginger-1tsp


For Grinding:

Cashews-10 to 12

Roasted Peanuts-1/4 cup

Dry Roasted sesame-2 tbsp

Dry Roasted coriander seeds-2tbsp

Coconut-1/2 cup


Method:

Wash the brinjals well, and make 2 perpendicular cuts through its base, making a criss-cross, and leaving the head (green stem) intact. Now heat oil in a wok for frying. When it’s ready, drop 2-3 tiny brinjals at a time and deep fry till they turn purplish-grey, and the skin becomes crispy. Remove and keep aside.

Roast the sesame seeds, coconut,peanuts, coriander seeds, Grind the ingredients with water to a fine paste and set aside.

Heat oil in a pan. Add the green chilli. Ginger,Then add onion fry until brown but not too dark-stirring contently to avoid burning.


Add chopped tomato ,turmeric powder,cuminpowder, coriander powder and red chillipowder, and fry for another 5 minutes.

Now add the ground paste, little water and bring it to a gravy like consistency and simmer for 10-15 minutes.

Now add the fried brinjals to this gravy. Stir gently to allow gravy to penetrate the slits in the brinjals. Cover and cook for another 10 minutes.

Garnish with coriander leaves and serve the traditional Hyderabadi Baghara Baingan with rotis, Parathas or Rice.

Apple Crumble

Apple Crumble

What my blog is about today is this beautiful apple crumble cake. It is so soft and yummy. The basic recipe is really simple. You basically just slice up the apples, then sprinkle the crumble topping over it and bake it in the oven. One of my friends once made. I’ve never actually made an Apple Crumble before.First Time I tried...I had taken recipe from here.I served with home made vanilla Ice cream.

Ingredients

Apples -1/2 Kg

Granulated sugar-180gms

Butter -120gms

Self-rising flour-150 gms

3/4 teaspoon cinnamon powder

1/2 cup rolled oats or Corn Flakes(I used Oats)

Juice of 1 lemon (increase if apples are sweet)

Sugar (granular) - 2 to3 Tbsps

Raisins – 1 handful

Walnuts 0r cashew– ¼ Cup/ chopped

Topping

Flour - 1/3 cup

Sugar- 2 to 4 Tbsps

Cinnamon – 1 level tsp

Butter - 2-3 Tbsps

oats - 1/3 cup

Method

Core and peel apples...chop into small pieces. Toss these with lemon juice immediately after all have been chopped or they turn brown.


Put the apple slices into the casserole dish. If you are adding the optional cinnamon, do it now. Make sure it is sprinkled evenly throughout the apples. Sprinkle the remaining of sugar evenly over the apples.

Mix the butter / margarine,sugar with the flour in a dry bowl using a fork until you have a texture like breadcrumbs. It's not important that every single bit is like breadcrumbs, but try and get most of it like that. This will take about three minutes. If you are adding the optional ingredients of oatmeal or Corn Flakes, do it now. Mix it all in well.


Toss this well with the raisins , sugar , cinnamon. Now toss in the oats lightly with a spoon Now, evenly spread the 'crumble' mixture over the sugared apples .covering the whole thing well up to the edges. Press down lightly.

Put this into the middle of your pre-heated oven at 180C . Bake at 180deg pre-heated oven till top light brown and stewed apple juice begins to appear on edges.

When the crumble is cooked, leave it to cool for at least 15 minutes.

Serve hot or cold with either a dollop of whipped cream, or vanilla ice-cream.

The ingredients below will make a medium sized apple crumble, enough for four people.
