Cherry Halwa

 Cherry Halwa is a vibrant, ruby-colored Indian dessert that balances the natural tartness of fresh cherries with rich, buttery textures. It is Infused with warm cardamom, ghee, and toasted nuts. Served warm or chilled, it offers a luxurious texture, subtle sweetness, and a stunning colour that makes it as visually appealing as it is comforting with its smooth, melt-in-your-mouth. A dessert fit for any celebration or as a special treat!



Ingredients

 Cherries Pitted- 2 Cups

 Corn flour-2 tsp

 Water- 4 tsp

Ghee- 1 tbsp

 Nuts-Handful( I added Cashews)

 Sugar-1 Cup

Cardamom powder-1/4 tsp

 

METHOD:

 1. First pit(Remove Seeds) the cherries, cut them into half and keep aside.

2. Mix the corn starch and water nicely in a small bowl and keep aside.

3.Add the ghee to a nonstick pan. Once it is hot, add the nuts and fry until slightly golden. Remove the nuts from the ghee and keep aside.

 

4.To the remaining ghee in the pan, add the pitted cherries. Saute and cook the cherries in medium flame  for about 3 mins until the point when the cherries start to soften.

5.Now add the sugar to the pan. Continue to cook by stirring occasionally. While stirring crush the cherries with the ladle. The cherries will leave out water, bubble up and cook in their own juices. Continue this process for until the cherries are almost soften.

 

6.Now, add the corn starch paste to the pan. Mix well. The cherries will now start looking glossy. Continue to cook, by stirring constantly, until the mixture just starts to thicken.

 

7.Add the remaining ghee Mix and keep cooking the halwa till it thickens, turns glossy, and doesn't stick to the pan. Add cardamom powder and  nuts mix well. Turn off the flame

Serve hot or cold in small bowls.

Mango Kesari

 

Mango Kesari, also known as Mango Halwa or Sheera, is an easy dessert made with ripe mangoes, semolina, cardamoms, sugar, nuts and raisins. Rava infused with the delicious flavors of mango. The fruit tinge and flavour enrich the whole kesari. Mango Kesari is yet another delicious kesari variety with the richness of ripe mango puree.I made this Kesari for our Wedding day!

No food colour-Adding mango pulp not only adds colour but also adds flavour, goodness of mango in the sweet.So I didnt add any Foodcolour.

 Previously I made FruitKesari & Pineapple Halwa


Ingredients:

Sooji| Rava  -1cup

Fresh Mango pulp   1/2 cup

Water- 3 cup

Cardamon powder 1 tsp

Sugar  1/2 cup

Ghee  3-4 tblsp

Cashew nuts - few

Raisins-few

 Method:     

1.Fry Rava with 2tbsp of ghee,till aroma leave out on medium flame(Don't over fry) and keep it aside.

2. Add 1 tsp ghee fry raisins and cashewnut and keep it aside.

3.Scoop the mango pulp firstly from the mango. Then puree it to make it smooth.

4.In  the pan, add water and bring it to boil. When the water starts to boil, add roasted semolina little by little and keep stirring and cook completely till it soft.

5.Then, add sugar and mango pulp and stir well. Sugar dilutes the mixture. But stirring continuously, makes the kesari to become thicker quickly.

6.When the whole mixture gets thicken, add  cardamon powder remaining ghee and mix well.  Finally, add roasted cashews and mix well. Switch off the flame.

 Yummy, Mango kesari is now ready to serve

Instant Falooda-Rose Falooda!

 Instant Falooda

Falooda is a delicious milk based dessert popular across India & favorite dessert of my family. A uniquely delicious dessert drink and very popular in India.This is a rose  flavored falooda, is a fantastic summer treat!



In this recipe you can make instant falooda mix which is usually available in the market in nice packets and use it with milk & prepare falooda whenever you want. These are cost effective, hygienic and made without any preservatives. It takes just few minutes to cook the Homemade Falooda.  You can easily prepare this chilled drink with various layered elements. In addition, it tastes amazing with falooda milk mixture, ice cream, and a nice garnishing with colorful tutti fruity, fruits, and dry fruits and it is best served chilled. I used Rose flavour  in this recipe.( I didnt add Sugar)

 

Ingredients:

Fat Milk- 1 litre

Soaked sabja seeds -1 tbsp

Rose Syrup- 1tbsp

Icecream 4 scoops

Chopped nuts-3 tbsp

Tuttifrooti-1 tbsp

Instant Falooda mix- 1 pkt.

Method:Rose Falooda Mix:

1. Heat full fat milk with water in a pan to boil.

2. Lower flame & pour the rose falooda mix in to it.

3. Stirring constantly allow milk to come to boil again.

4. Lower flame & cook for 8-10 min.

5. Switch off flame & mix.

6. Transfer rose falooda to a bowl & allow it to come to room temperature & then put it in refrigerator to chill for 3-4 hours.

7. To serve rose falooda put 1 tbsp rose syrup per glass

8. Pour rose falooda over it.than add sabja seeds.

9. Put 1 scoop vanilla ice cream over it in each glass.

 

10. Garnish with pieces of cashew nuts & pistachios &tuttifrutti

11. Rose falooda is ready!
