Maida Besan Dry Fruit Burfi




Previously I made in the combination of Maida BesanBurfi. This time Just I tried  with dry fruits with maida with a mixture of besan as a Diwali sweet and that can be made easily the taste was awesome ! 

Ingredients:
Ingredients: 


Milk Powder-100gm
Maida-100gm
Besan- 100gm
Badam- 50 gm
Cahew nuts-50 gm
Pistachio- 25 gm
Ghee- 200 gm
Sugar 300gm
Cardamom Powder- 1 tsp
 
Method:
1.Roast Maida  & Besan separately  in a 1/4 cup of ghee on medium heat until aroma  comes and then set aside.
2.Powder each of the nuts separately using  mixer/ blender until fine. Do not over powder nuts as the nut butter in them will cause lumping. Place all the powdered nuts in a bowl and mix well.
3.Powder cardamom finely and add to the powdered nuts and mix well. Keep this mixture aside.
4.Grease a deep tray/ plate  with a drop or two of clarified butter and keep aside
5.Mix sugar and water and place on heat and allow to  boil.  Allow the sugar to boil until it achieves one string consistency syrup.
6.As soon as the syrup achieves one string consistency, pour the entire nut powder, Milkpowder, Maida& besan flour into syrup and mix well.
 
7.Stir the mixture in a medium flame / heat it till it leaves the sides of the kadai.
8.You may test it by putting the mixture in a small plate,and seeing whether it becomes little hard when it is cooled.
9.Remove from heat and pour onto the pre greased plate and quickly spread and cut it in to desire shape or Cut into 1 inch square pieces.
  Tasty Mix dry fruit Burfi is Ready

Butter Badusha



Wishing you all a very Happy, Prosperous & Safe Diwali!
Badusha is a south Indian famous sweet dish and mainly prepared during diwali and few other festivals and weddings. It has a layered texture and is coated with sugar syrup. Pretty easy to make and tastes great. My daughter loved it very much.For this diwali I made Badhusha and Jangri.


Ingredients:
 All Purpose Flour/Maida-2 cups
Cooking Soda-2 pinch
Kesari Color-1/4 tsp   
Sugar powder  -1 tbsp                       
Saffron strands -Little
 Cardamom Powder-1/2 tsp
 Butter - 1/2 cup
 Oil-To fry
Water-As required
Edible camphor- Pinch
For Sugar Syrup:
  Sugar-1 1/2cup
  Water- 1 1/2 cup
For Garnishing:
    Almonds and Pistachio Grated (Optional)
 
Method:
1. Sieve the flour and cooking soda in a mixing bowl.
 2.Take a wider bowl, put Maida Add Kesari color,Saffron,Cardamom powder and Add 1tbsp sugar powder to it and mix till well combined. Finally put the butter and mix well in hands.
3.Sprinkle little water at a time and make soft tight dough.
4.Make a small ball and while making balls, dont allow it get cracks in out sides.
5.Flat the balls in palm & press a little in middle, using our thumb and deep fry them in very low heat.
6.Flip them and cook both the sides.The badusha should turn golden very slowly.
7.Take a wider Kadai, Boil sugar with 3/4 cup of water in a pan to a syrup of single string consistency.Addsaffron string and edible camphor in sugar syrup.
8.Then put fried Badusha in to the sugar syrup, dip gently and let them soak in the sugar syrup for few minutes
9.Once it coated in all sides, transfer in to plates and Garnish the badusha with saffron strands, nuts or coconut before the sugar syrup dries. Delicious Badusha is ready.

Maida-Besan Burfi

Maida-Besan Burfi
Delicious and easy to make this burfi.  Just I tried made with maida with a mixture of besan and the taste was awesome !


Ingredients:
Besan - ¾ cup
Maida - ¼ cup
Sugar - 2 ½ cups
Ghee - ½ cup
Saffron - ¼ tsp (warm & powder)
Cardamom powder - 1 tsp
Chopped nuts - to garnish (optional)

Method:



1.In a kadai, heat the ghee.Mix the besan and maida & add to the ghee.
2.Roast on a low flame till the colour changes & a roasted aroma comes. Remove from flame.
3.Add enough water to sugar in a saucepan, to immerse just completely.
4.Heat on a medium flame stirring continuously till it dissolves.
5.Boil till it is past one-string consistency – if you drop a tsp in cold water you should be able to roll it into a soft but firm ball.
6.Remove immediately & add the fried mixture along with. Cardamom powder .Stir well for a few mts – it will start solidifying Transfer to a greased plate,  & cut into pieces.

Banana Pancakes

Today when I saw 3 ripped bananas, I got reminded about this recipe... Sometime back I had read this in an article and was curious how exactly this will turn out. Believe me, this in did was quite nice recipe - a change from normal breakfast and healthy too...
Ingredients:
Wheat flour - 1 1/4 cup
All Purpose Flour (maida)- 3/4 cup
Baking Soda -3/4 tsp
1/2 tsp -baking powder
2 tbsp-sugar
1 1/2 cups milk

Pinch of salt
2 small ripe bananas, finely chopped
Method for making Banana Pancake:
1. In a bowl mix the dry ingredients all purpose flour, wheat flour, baking soda, pinch of salt and sugar.Stir in milk and bananas just until moistened.
2. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
3. Turn and cook till the bottom part turns to nice brown in color.
These Banana Pancakes can be served warm for breakfast . I served pancake with honey.. Its a big hit with my kids.
