Pineapple Raita




Delicious Pineapple Raita in meal provides a very cool and refreshing feeling.  This amazing raita goes well with any spicy meal.  It is a perfect blend of pineapple chunks and creamy yogurt and its sweet and salty - a very distinguishing flavor, is a great twist to the regular raita. Pineapple raita, is my all time favorite and it has been a hit in my family and my friends too.


 
Ingredients:
Chopped fresh pineapple-1 Cup
Sugar-3 tbsp
Yoghurt-2 cup
Chopped coriander leaves-1 tsp
Black pepper powder-1/2 tsp
Roasted cumin powder-1/2 tsp
Salt – Pinch
 
Method:
1.Take the thick yoghurt/ the curd in a bowl. Beat the yogurt till smooth.
2.Take Cumin and black pepper and roast it on a low flame on a griddle, and whisk well till smooth powder.
3.Take fresh pineapple and chop them into small pieces.
4.Heat 1/2 cup of water in a saucepan on medium high flame and Add pineapple and sugar cook it on medium flame for 10 minutes or till it gets slightly soft not too much.
5.Strain it through a strainer.  Let it be cool completely.
6.Add smooth Curd / yogurt in a glass bowl then pineapple ,syrup, add ground cumin powder, red chilli powder, pepper and salt and stir well till it mix properly.
7.Keep it in the refrigerator for an hour before you serve it.
8.Garnish it with fresh coriander leaves and temper with the roasted spices.
Notes: Please make sure that the yoghurt is not sour, else it will spoil the taste of the whole thing.
Don't add fresh pineapple straightway without boiling in syrup, otherwise it will turns bitter in taste.

Fruit Chaat



This fruit chaat is a simple dessert with a blend of fruits, tossed with chaat masala and soaked in orange juice. It was a delicious way of eating a great variety of fresh, seasonal fruit. I saw this recipe in a magazine recently, and it looks too good and easy to try it out.



Ingredients:
Apple - 1 Peeled and cut into cubes
Orange -1 Remove the skin and cut each segment into half
Seedless Grape red or green - 1 cup cut into half
Pineapple -1/2 Peeled and diced
Banana - 1 Sliced
 (Can add any fruits like Guava,pomegranate seeds, papaya,Pear,Kiwi,Peach,Ripe and Sweet Mango . I always keep the oranges and bananas, as they add a lot of color and texture to the dish.)
 
Dressing :
Mint Leaves - few Chopped
Lemon juice /orange Juice- 2 tbsp
Black Salt - 1 tsp
Chaat Masala - 1/2 tbsp
Pepper powder - 1/4 tbsp
Salt - 1/2 tbsp
Sugar - 1 tbsp
Method :
In wide bowl add all the fruits and mix well. On the top add dressing ingredients mix well. Chill it about 10to 15 mins. serve cold.

Eggless PineApple Pastry


Pineapple is my all time Favorite. In my home everyone loves Pineapple. And Eggless Pineapple Cake tastes yummy and delicious. It is an extremely moist cake and very easy to prepare. I have used fresh pineapple for the puree.This time I made Pineapple Pastry ,It tastes yummy and delicious on its own.. Pastry is a term used in India to refer to any cake made with a fresh cream filling or frosting. The most popular ones are the Black Forest and Pineapple pastries. This cream pastry recipe is prepared with pineapple flavor and is almost the same as the typical pineapple cream cake. It only differs in topping, with Fresh cream in used in the topping which sets nicely and quickly so its not necessary to chill the pastry before serving. This cake has subtle flavors and if you love pineapple you will adore this cake. 
 
 Ingredients:
All purpose flour- 200gms
Sweetened condensed milk- 200 gms
Unsalted Butter - 1/2 cup
Baking powder - 1 tsp
Baking soda - 1 tsp
Pineapple essence - 1 tsp
Fresh pineapple juice (NOT syrup)-1 cup

Ingredients for the sugar syrup:
Sugar -2 Tbsp
Water - 1/4cup
In a thick bottom pan,mix the sugar and water and boil till the sugar melts.Keep aside to cool.

Ingredients for Frosting:
Fresh cream - 300 ml
Powdered sugar - 4-5 tbsp
Pineapple essence - 1 tsp
Keep cream and the beater blades in the freezer for about half an hour.
Add sugar and essence to the chilled cream.
Beat well till the cream is thick and forms soft peak. Keep refrigerated till use.

Ingredients for Garnishing:
Pineapple pieces - 1 cup
Cherries - few 

Method: 
 
1.In a mixing bowl combine flour, baking soda and baking powder sieve and Keep aside.
2.Add condensed milk, butter, Pineapple essence and Finally add 3/4 of pineapple puree. Mix and stir and fold everything together.
3.Scrape batter into a greased 6" round cake pan. Preheat oven Bake at 180C.
4.Bake for 20 to 25minutes or until a toothpick inserted at the centre comes out clean.
5.Allow the cake to cool properly before frosting.
6.Whip 400ml whipping cream with 4tbs powdered  sugar +1 tsp pineapple essence until thick and holds peaks.
7.Now divide the cooled cake horizontally into half using  a serrated knife.
8.Carefully slide the top layer using a cake lifter or cake board or a flat plate and keep it aside.
9.Keep one layer of the cake on the serving plate.Sprinkle 5-6 tablespoons of sugar syrup on it.
10.Now spread prepared cream frosting on it.
11.Put other layer back on the first layer making it a full cake.Again spread sugar syrup on it.
12.Cover the cake completely with cream frosting on all sides and the top.
13.Level the top and sides with a broad spatula dipped in chilled water.
14.Decorate the top with pineapple pieces and halved cherries on top.
15.Keep chilled in the fridge till use.

Pineapple Jam Cookies & Microwave Brownies

When I searching for baking recepies I came across this pineapplejam cookies/tarts. I was very much impressed and decided to prepare this cookies. I was very excited and started preparing to make some pineapple tarts. Pineapple tarts take lots of hours to make as there is the cooking of pineapple jam (which can take hours) and preparation of pastry followed by baking. Making these pineapple tarts needs some patience, especially with the pineapple filling.Pineapple tarts have a nice buttery smell pastry which melts in the mouth. I modified a bit. I started with this recipe as a base and made my own modifications, which ultimately inspired a “Wow!” Pretty simple to make and the cookies came out very good especially when hot from the oven.

Pineapple jam

Pineapple jam makes a great spread for toast, biscuits, pancakes or other jams. It’s good on everything!

Ingredients:

250 gms -Pineapple

250 gms -Sugar

1/4 tsp pineapple essence

2-cups water

pineapple jam:

Method:

Cook the pineapple pieces with water on a low fire until tender and 1 cup water is left.when cooked smash it nicely.

Make sugar syrup of thread consistence then add cooked over low heat until it caramelises and dries up somewhat.

To test whether the jam is done, pour some jam on a dry plate. Allow it to cool and tilt the plate. If the jam is ready, it will fall in flakes.

When the jam is done, Add essence, cook until setting point is reached. When the jam cools, Pour into a jar and close the mouth of the bottle .


Ingredients

250 gm-plain flour

50 gm-milk powder

150 gm-Butter

1/4 tsp- salt

100 gm- icing sugar

1tsp-vanilla essence


Pineapple Tart:

(1) Cream butter and icing sugar till creamy but not till oily.

(2) Add in vanilla essence, salt, flour and milk powder.

(3) Mix till a dough is formed. Chill in the fridge for 30 mins. If dough is still too soft to be rolled out a this point, add in a little more plain flour and knead lightly into a pliable dough.

(4) Once the dough is not so sticky, take a bit into your hand and flatten it.



(5) Place a small ball of pineapple jam on top. Pinch some dough and roll into thin strips. Place on top of jam into a criss cross style.

(6) Brush cookies with egg polish/or butter and bake for about 15 mins or till cookie turns into golden brown.

(7) Leave to cool on and store in air-tight cookie containers.


Microwave Brownies:

I have taken this recepie from Asha.Asha When seeing ur Brownies I was sooo tempted to make it.. I would love to have those brownies first. They looks fabulous and delicious.I prepared it last night itself..cooked in the oven.It takes 5 min for me. I made small modification instead of choco chips I used nuts and I added small choclate bar and no eggs. Asha..has beautifully explained step by step process on her blog.
