Eggless Apple Upside Down Cake

Apple Upside Down Cake is a refreshing dessert. The amount of caramel is just enough to bring out the sweetness and moisture of the apples.. It is really an amazing Eggless cake with a really good texture and the amount of sweetness is just perfect for our palate,and tastes delicious. I baked this for my guest .They loved it very much.

Ingredients:
Apples - 2 medium size
Sugar - 2 tbsp
Lemon Juice - 1/2 tsp
For Batter:
All Purpose Flour / Maida - 1 1/2 cup
Sugar - 1/2 cup
Baking Powder - 1 tsp
Baking soda-1/2 tsp
Milk - 1 cup
Vanilla Essence - 1 tsp
Lemon Juice - 2 tsp
For Caramel
 Brown Sugar-4tbsp
 Butter-2tbsp 

Method for Eggless apple Upside Down Cake
1.Wash apples dry it and peel them, core them, cut them into wedges.
2.Add 2 tblspn sugar and 1/2 tsp lemon juice over it and toss well. Set aside.

Caramel Preparation :
 1. Heat the pan, add brown sugar and butter. Mix well until sugar caramelizes.  Stir it constantly until you get golden brown syrup.
 2. Pour the syrup into a baking pan. Use fresh sliced apple and place it on top of the caramel and set aside.
 


Method;
1.Preheat oven to 180 degree C. Grease a baking pan with butter and set aside.
2.Take Maida, Baking Powder, Baking Soda together. Sieve it in a large  bowl.
3.Take a deep bowl or container and pour melted butter in it. Add sugar to it and beat well until smooth. Then add milk and mix for another 2 minutes.
4.To this mix add the sieved dry contents. Add the Vanilla essence and give it a good stir for a minute so that everything is uniformly mixed.
5.Gently pour the batter over the apple slices.  Bake it for30 to 35 mins. Check with tooth pick by inserting in the centre. The cake is done if toothpick comes out clean.
 6. Invert the cake onto your serving plateand allow it to cool before slicing.

7. Yummy apple upside down cake is ready to serve.

Vegetable Rava Idli

Rava idli is one of the simple recipe which combines the goodness of many vegetables and spices. It’s not just healthy and irresistible but also very easy to prepare too. Since there is no soaking, grinding or fermenting involved, you can enjoy these idlis at any time without the preplanning. My son love this idli very much. so often I prepare this idli for breakfast.



Ingredients:

Rava /Semolina – 2 cups

Oil – 2 Tbsp

Mustard Seeds – 1 tsp

Asofoetida (Hing) – pinch

Channa Daal – 1 tsp

Urad Daal – 1 tsp

Broken Cashew Pieces – 1 Tbsp

Thick Yogurt (curd)– 1 cup

Curry Leaves – 1 sprig

Cabbage,grated Carrot-1/2 cup

Green Chili – 1 (to taste), finely chopped

corriender-2tbsp finely chopped

Ginger – 1 tsp, finely grated

Ghee-1tsp

Salt – 1 tsp (to taste)

Water – 1 cup
 

Method:
1.Roast rava it on medium flame until it turns light brown, stirring continuously. Make sure that it does not burn. Turn off the flame and transfer it to a plate. Allow it to cool for 7-8 minutes.
2.Heat 1/2 tablespoon ghee and 1 tablespoon oil in a heavy based pan or kadai. Add mustard seeds; when they start to crackle, add  asafoetida, chana dal and urad dal. Sauté until dal turns light brown. Add curry leaves, and cashew nuts and sauté for 30-40 seconds.
 3.After 2 hrs , in a large bowl add curd in rosted rava,put little water around 1/4 cup to bring consistency to the batter , add mixed vegetables , chopped green chilli, minced ginger , salt and. coriander leaves and mix properly
 4.Grease the idli plates with ghee and pour in  a ladle this idli batter into the idli plates and steam it for 10-15 minutes .
5. Remove it from idli plates and serve hot with your choice of chutney

Chickpea Crackers

These crackers are prepared easily with basic ingredients which is quite easily available in everyone's pantry. They are always salted and can be made in different flavours and makes an excellent evening snacks. After going through variety of cracker recipe  of bloggers in blogs ;  I thought to give it a try at home and it turned out to be really good.

Ingredients:
Gram flour/besan/chickpea flour-1 cup
Maida -1/2 cup
Semolina (fine sooji) - 2 tbsp
Curd-    3 tbsp
 Oil  -2 tbsp
Kasuri methi    1 tbsp
Red chilly powder    1 tsp
Salt  - as per taste
Sugar-2tsp
Black pepper powder    1/2 tsp.
Turmeric powder    1/4 tsp
asafoetida powder- A pinch
Method:
1.Add Maida, chickpea flour, and semolina (rawa/suji) in a large bowl and combine well with a spoon
2.Add red chilli powder, turmeric powder, asafoetida powder), sugar,salt and crushed Kasuri methi leaves (dried fenugreek) in the bowl.
3.Now add oil and rub all the ingredients together with fingers.
4.Pour a little curd at a time and knead into semi-hard dough.If needed Slowly add the water and turn everything as a dough
5.Roll the dough on a floured surface, as a very thin dish.
6.Cut the dough with cookie cutter and transfer it to the prepared baking sheet.
7.Pre heat oven to 180°C .Bake for 10minutes, then turn the pan and bake for 4-5minutes.( f the edges and the tops of the crackers have browned significantly, then pull them out of the oven. Otherwise, continue baking )
8.Let the crackers cool completely.Store in an air tightened box.
