Milk Mysorepak

Milk Mysore Pak, a soft and melt-in-mouth sweet is a variation of the traditional Mysore Pak. It is Made with milk, maida,/Besan sugar and ghee, this sweet is extremely soft in comparison to its besan (gram flour) whisked continuously with hot sugar syrup. Complex flavours and simple textures are combined in this classic Mysore Pak recipe, to make a beloved sweet delicacy. . This milky confection is a perfect to share on any special occasions and festivals. Today I Prepared as Diwali Sweet. Came out perfect.




Ingredients:

Unsweetened Milk powder- 1 cup

Sugar - 3 cups

Water- 1 cup

Ghee (melted and at room temperature)- 2 cups

Maida/Besan  -2 tsp

 

Method:

1. In a mixing bowl, add one cup of milk powder and two teaspoons of gram flour. Mix contents well by gradually pouring in half a cup of hot ghee in the bowl. Whisk the contents well into a smooth batter. Keep this aside.

2. In another bowl take the remaining ghee – 1 and 1/2 cups melted and at room temperature.

3. In a thick bottom pan at low to medium flame add sugar and 1 cup of water.    Keep stirring until it attains one string consistency.

 4. At this stage, lower the flame and add the milk powder batter. Keep stirring continuously so that it won’t stick at the bottom and gets burnt.

 

5. Once the mixture starts bubbling add ¼ cup of ghee at a time to it, stirring continuously, till the ghee is absorbed by it.

6. Mix the contents well without pausing and pour in the remaining hot ghee batch by batch.Avoid lumps and keep stirring. During this cooking process it turns into a nice color and also aromatic.

  7.  Once it separates from the sides and when it starts bubbling take a pinch of it and try rolling into a ball. If it is soft and non-sticky, switch off the flame.

  8.  Any excess ghee floating separately will be absorbed later when it has to set well. So, transfer the entire content from the pan to a greased tray or square-shaped cake tin. Butter paper or parchment paper can also be used and let it cool down.

 

9. It will take around 4-5 hours at room temperature. As it cools down, the center becomes darker in color than the sides.

Cut it into slices and serve it. Delicious MysorePak Ready Enjoy!

Apple Shaped Mithai

Apple Mithai is easy to make sweet. Diwali is on the corner and I am going to make apple mithai. Apple Mithai made from cashews but I used milk powder. This dessert made with milk powder in sugar syrup and with a hint of cardamom then shaped it into an apple and a clove is put on it. Then they are lightly coloured using red food colour. The process is quite easy does not need much attention These not only looks super adorable but With its attractive shape, shiny surface, smooth texture it taste so delicious that you cannot stop with just one. I decided to give it try. My family loved it.

 Ingredients:

Sugar – 1/2 cup

Water – 1/2 cup

Milk powder – 1.5 cup

Ghee – 1 or 2 tbsp

Soaked saffron strands

For garnish

Cloves

Red food colour

Pistachio



Method:

1. Heat pan then put sugar and add some water. Mix it well.

 2. Cook on low medium flame. Once the sugar melts into the water .Once the sugar dissolves, let the mixture boil till we get one string consistency of sugar syrup. Add cardamom powder once the mixture starts boiling.

3. Now reduce the heat and add milk powder in parts. Cook it for 5-6 min on low medium heat till the mixture becomes soft dough. Then add ghee and kesar milk into the mixture so the mixture will become softer.

 4. Switch off the flame and transfer the mixture into bowl and Let it cool down slightly.

 5. Make small balls, press it gently with the help of your finger and shape them like apple. Place cloves in the centre.

  6.Now in a small bowl mix red food colour in 2 tsp sugar water and with paint brush and give red shade to the apples.( You can also mix red food color with little water. but adding it with sugar syrup will give a glossy finish.)

7. Garnish with pistachios. Delicious apple mithai is ready to serve. Apple Mithai is ready to serve. Enjoy!!!

There are many ready-made Instant mixes available in market but no one comes even close to the taste of homemade gulab jamuns made from traditional mawa or khoya with this recipe. But, this recipe milk gulab  jamun is that it is directly made from milk rather than khoya  . It is made with simple and easy ingredients. Made with milk, flour, green cardamom powder, baking soda and sugar syrup, this dessert recipe is absolutely exquisite and makes you crave for more. What makes this sweet delight different from the regular gulab jamun. Make it from scratch today and shower your taste buds with its unforgettable taste.I made this Sweet for My son inlaw's birthday and for our wedding day.

 
Ingredients:
Milk- ½ litre
Maida- 1 tbsp
Sugar- 11/2 cups
Water-2 cups
Cardamom powder- ¼ tsp
Baking Soda-2 pinch
Ghee/Oil- For Frying
Saffron- pinch
 
Method:
1.Take sugar,saffron ,cardamom powder and 2 cups of water in a pan, boil for 15 minutes on medium heat. Till you feel the stickiness in the syrup. Keep stirring
 
2.In a deep-bottomed pan over medium flame and add milk in it. Let the milk come to a boil. Keep stirring the milk while it boils.
3.When the volume of the milk has reduced and it has become thick, take it off the flame.
 
4.Transfer it in a bowl. Once it cools down, add flour, baking soda in this bowl. Using your hands, mix it well and turn in it into a soft dough.
 
5.Now, take small portions from this dough and make small balls of it. Place a pan with ghee/oil over medium flame.
 
6.When the oil is hot enough, add the balls in it and let these cook. Fry them until they turn brown in color. 
7.Once done, then add in the hot sugar syrup. Now cover the sugar syrup pan and simmer for 8-10 minutes on low heat..It increases in size when it soaks the sugar syrup.
8.Dip them nicely in the syrup and serve these GulabJamun Warm or cold  to enjoy!
