Potato Bonda


Who doesn’t like a warm deep fried snack to have it in tea time? Today i made this as a tea time snack.This Potato  Bondo is a very tasty and taste bud tickling food. It’s a perfect tea time snack.

Ingredients:
3 medium sized potatoes
2 small onion cut in small pieces
3 green chilies small cut
1 small piece ginger grated
1 small bunch coriander leaves
½ tsp turmeric powder
1/2 tsp red chili powder
1 tsp lemon juice
salt to taste

For the Batter :
Bengal-gram dal flour – 3 cupfuls
Rice flour – ½ cup
Red chilly powder – ½ teaspoon
Baking powder – ¼ teaspoon (optional)
Salt – ¾ teaspoon, (as per taste)

Method:
1. Combine the Bengal-gram dal flour, rice flour, chilly powder, baking soda powder, and salt by adding enough water to make it a thick batter which pours heavily from a spoon. Beat up the batter for 2 minutes and keep aside.
    2. Boil and mash the potatoes. Add small cut onions , , green chilies, grated ginger, small cut coriander leaves, red chili powder, and salt to taste
   3. In a wide mouthed pan, heat 2 tsp of oil and splutter the mustard seeds. Add the green chilies and sauté for a minute. Add the onions and saute till translucent.. Add the turmeric powder, salt, coriander leaves and mix. Set aside to cool and squeeze half a lemon into the mixture.
  4. Add to the potato mixture, mix and make small lime sized balls and set aside. Now heat a sauce pan with oil, when hot
5. Dip the potato balls in the batter and drop them in the oil one by one.. Let them start to turn a slight shade of brown
6. Remove them to a dry plate. Serve hot with any of your favorite chutneys and enjoy!

Eggless Brownies


I Love brownies!! But always I was hesitant to try baking. My previous experiences scared me way too much to even think about it. But now after trying so many times.. Now getting confidence to bake.This is my first try for brownies. I have taken this recipe from here .These are quick, simple and delicious!
Ingredients
    * All-purpose flour-1/3 cup
    * Water-1 cup
    * Butter-1/2 cup
    * Unsweetened cocoa powder-2/3 cup
    * Sugar-2 cups
    * Vanilla extract-1 teaspoon
    * Baking powder-2 1/2 teaspoons
     * 1/2 cup chopped walnuts (optional)

Method:  
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. In a heavy saucepan combine the 1/3 cup of flour and water. Cook over medium heat stirring constantly until thick. Transfer to a mixing bowl and set aside to cool.
   2. In a small saucepan, melt butter. When butter has melted, add the cocoa and mix until smooth; set aside to cool. Beat the sugar and vanilla into the cooled flour mixture. Stir in the cocoa mixture until well blended. Combine the flour, baking powder and salt, stir into the batter until just blended. Fold in walnuts if desired. Spread evenly in the prepared pan.
   3. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool before cutting into bars

Karuveppilai Podi ( Spicy curry Leaf Powder)


Curry leaves are an essential ingredient in South Indian dishes . Curry leaves have medicinal properties Botanical Name- Murraya koenigiIndian Name- Curry patta Curry Leaf is flavorful and digestion friendly Leaf. It is rich in calcium and has vitamin A also.Its oil is said to prevent hair fall and delay hair greying. Nothing can beat the fresh flavour of homemade curry leaves powder. Curry leaves powder can be stored and used when needed. I love podis of all kinds. once they are made, they can be stored forever and whenever I feel not well not able to cook, we can always fall back on the podi.. Hot steamed rice with curry leaves powder and a tsp of ghee-wow! is just heaven!
Ingredients:
Curry leaves - 3 cups (heaped)
Red chilli - 6 to8
Black peppercorns - 1/4 tsp
Urad dal - 1/4 cup
Channa dal - 1/4 cup
Salt- as per taste
Method
1. Wash curry leaves and dry it well.
2. Dry roast, urad dal, channa Dal, pepper till you get a nice aroma.
3. Dry roasts red chillies for a few minutes.
4. Dry roast curry leaves well. Do not burn it .
5. Dry grind everything slightly coarse along with salt required.

Masala Cookies


While surfing I came across this recipe  from Ramya's Mane Adige and Namratha’s Finger licking Food. After seeing these cookies  I was tempted to bake this cookies. After long  time iam baking cookies. They are extremely delicious, mild spice and savory! Perfect with cup of coffee or tea as evening snack!IThank you both of you to share such a wonderful recipe:)



Ingredients:
All purpose Flour/Maida-1cup
Unsalted butter-1/2 cup
Sugar-2 tsp
Salt-1 tsp
Baking powder-1/4 tsp
Green Chillies chopped (alter to suit your taste)-5 to6
Yoghurt (plain)-2 tbsp
Curry Leaves chopped into small bits-10
Ginger, grated-1/2pc
Little coriander leaves finely chopped)
 I made little change in this recipe I didn’t addMint Leaves (pudina) , hing.or redchilli powder.. ( Instead of Pudina I added coriander leaves ) Instead of grating chillies I reduce the chillies and ground into coarse paste!.
Method:
Mix the flour with sugar, salt and baking powder,
Cut the butter into cubes and mix it in with the flour using a hand held mixer. It should be a bread crumb consistency, Knead this as much as possible to make a dough.
  Add the Ginger paste + little coriander leaves finely chopped+ green chilliespaste+ cut curry leaves and mix well.
Add 1 tsp of yogurt and mix well. Make sure that the dough is stiff .Add another ½ tsp yogurt only if required. Knead well for another 2-3 minutes and keep aside.
Take a small portion of the dough and roll like a chapathi until it is ¼ inch thick cut into desired shapes with the help of cookie cutter and place on a greased baking tray.
Prick the top with fork and brush with butter on each of them.
Bake for 20 minutes or until golden brown. or until done.
Cool and store in airtight containers.
