Bourbon Biscuits

Bourbon Biscuits- Homemade Heaven

While browsing I have found a recipe for some lovely, chocolaty, chunky homemade bourbon biscuits! The moment, I saw this bourbon biscuits I decided to bake them. Everyone knows about bourbon biscuit for its chocolate cream filling It surely is a hit amongst kids. I took time out to try the recipe and make the bourbon biscuits. The biscuits came out very well.

Ingredients:
1 cup all purpose flour (maida)
1/4 cup unsalted butter
1/3 cup sugar
1/4 tsp baking soda
1 tsp baking powder
1 tbsp cocoa powder
1/2 tsp vanilla essence
1 tsp golden syrup OR honey
2-3 tbsps cold milk
Sugar for sprinkling
For filling:
1/4 cup butter
1/3 cup icing sugar
1 tsp cocoa pwd
few drops vanilla essence
 Method:
1 Sieve together flour, baking soda, baking powder and cocoa. Keep aside.
2 In a bowl, cream together butter and white sugar until well blended. Add vanilla essence and golden syrup and combine.
3 Mix in the sieved ingredients with butter mixture and combine to form a soft dough. Add little milk to form the dough.
4 Place butter or plastic wrapping sheet on the work surface, sprinkle some flour and roll the dough into a large roti. Use a knife to cut into rectangle shape pieces. Use a toothpick to prick over the rolled out rectangle. Sprinkle white sugar on top of each rectangle.
5 Grease a baking tray and place each rectangle shaped dough on the tray and bake in a pre-heated oven at 180 degrees C for 14-15 mts or till the edges are toasted. Once baked, the cookie will feel soft on touch but once cool it will harden. Cool for 3 mts before proceeding with the filling.
6 Repeat the process with remaining dough.
Method for the filling:
Mix all the filling ingredients to a smooth paste. Sandwich the biscuits with this chocolate butter icing.
Note:
This recipe shall make around 14-16 bourbon biscuits all together. To enhance the flavor of the filling/icing of the biscuits, you may add 1 tsp coffee essence or 1/2 tsp instant coffee dissolved in 1 tsp water

Maida-Besan Burfi

Maida-Besan Burfi
Delicious and easy to make this burfi.  Just I tried made with maida with a mixture of besan and the taste was awesome !


Ingredients:
Besan - ¾ cup
Maida - ¼ cup
Sugar - 2 ½ cups
Ghee - ½ cup
Saffron - ¼ tsp (warm & powder)
Cardamom powder - 1 tsp
Chopped nuts - to garnish (optional)

Method:



1.In a kadai, heat the ghee.Mix the besan and maida & add to the ghee.
2.Roast on a low flame till the colour changes & a roasted aroma comes. Remove from flame.
3.Add enough water to sugar in a saucepan, to immerse just completely.
4.Heat on a medium flame stirring continuously till it dissolves.
5.Boil till it is past one-string consistency – if you drop a tsp in cold water you should be able to roll it into a soft but firm ball.
6.Remove immediately & add the fried mixture along with. Cardamom powder .Stir well for a few mts – it will start solidifying Transfer to a greased plate,  & cut into pieces.

Eggless Apple Raisin Muffins



Apples are an inexpensive and healthy fruit, providing us with fiber, calcium, phosphorous, vitamin C, vitamin A,and potassium, . Since markets carry apples all year round now, it's easy to enjoy apples whenever we want. I'd purchased some apples from the market the day before .I decided to make something light and healthy Breakfast/snack I made this egg less Apple muffins as a dessert. I made two batches, one with chocolate chips and nuts the other without them. It is Very tasty and east recipe. Trust me they are great for a breakfast treat! These are the best muffins that I have every made! They're sweet, nutty and full of apple flavor.

Ingredients:
    * Water 1/2 cup
    * Sugar 1/2 cup
    * Grated apples 1 cup
    * Raisins 1/4 cup ( can be increased if wanted )
    * Butter 1/2 cup
    * Baking soda 1 tsp
    * Vanilla Essence 1/2 tsp
    * All Purpose flour 1 cups 
  * Nuts & Chocochips

Method :
   1.Grate applesand keep aside.Preheat the oven to 250 degrees c .
   2. Add the sugar in a saucepan along with water apple raisins and butter Bring to boil
   3. Remove the pan from heat and cool completely.
   4. In a large bowl, stir the baking soda and vanilla essence into the   flour.
   5. Add the cooled mixture to the bowl and stir until blended.
   6. Fill the greased muffin pan with the batter to the top.
   7. Bake for 20 minutes.
   8. Delicious moist muffins are ready to eat.

Pistachio Cookies


Pistachio Cookies
These pistachio nut biscuits are easy to make, This cookie tasted great; very nice indeed.. They melt in your mouth like mmm.. What to say? The cookies were divine.

Ingredients:
Unsalted butter-125g
Sugar-115g
Plain flour-185g
Baking powder -1 tsp
Handful Unsalted Pistachio Nuts
Unsalted pistachios, finely ground in a food processor/mixer-1/2cups
Vanilla extract-1 teaspoon

Method:

1.Grind the 1/2 cup nuts using a blender into a course powder.Now take your handful of pistachio nuts and coarsely grind them, put these to the side in a separate dish.
2.In a medium bowl, whisk together flour, baking powder and ground pistachios until thoroughly incorporated.
3.In a large mixing bowl, cream together butter and sugar until light and fluffy. Add vanilla beating until completely combined.
4.Add the dry ingredients and mix just until combined.Fold through until it forms a stiff dough.
5. Preheat oven to 180 deg C. Bake until lightly golden and just lightly browned around the edges, about 12-15 minutes.
6.Remove and place on a wire rack to cool completely.

Choco Puri


 
Poori  is usually unhealthy and high fat bread so most health conscious people avoid it. While seeing spinach puris & beetroot puris a quick thought that came up in my mind of adding coco in puris . Who doesn’t love coco flavor? So I decided to try out this type. It is unusual and wonders whether it will work out? But it really did. It tasted so good and the light layer of choco looks so cute and attractive ;)



Ingredients:
Maida- 1 cup
Sugar-3 tbsp
Milk- 2tsp
Coco powder-2 tbsp
Ghee- 2tbsp
Salt-smallpinch
Oil/ghee –for deep fry.
For creamed Layer:
Cornflour-3 tbsp
Ghee- 2 tbsp
Method:
Sieve the Flour.Rub in ghee
Add sugar , salt and needful water to bind to a fairly stiff tough.
Then in coco powder add milk and make fine paste.and make a dough .
Roll out both parts separately into chappatis.

On the white chapatti, spread a thin layer of the ghee and cornflour mixture. 

Overthis place the second chapathi spread the cornflour mixture over this as well.
Roll both together into a long cylendricalshape and cut into slices.

Again roll out into thin puris and deep fry in ghee or oil till it done.Enjoy!
