Eggless Chocolate Orange Cake

A super soft and rich chocolate sponge is layered with a tangy orange and garnished with dark chocolate and some more yummy citrusy treats like orange Zest. I use fresh orange zest and orange juice in the batter for the flavour. This adds natural sweetness and also enhances the orange aroma and chocolate chips made for a great mouth-feel and a true tasting pleasure. This orange chocolate cake is super moist, decadent and easy to make! The orange flavour pops just enough without being overwhelming and gives this chocolate cake a really fresh and yummy flavour! It’s heavenly and chocolate and orange go so well together.

Egg less Orange Cake With Raisins

Orange peel pachadi

Ingredients:

All-purpose flour /Maida – 1cup

Thick curd/ yogurt-1/4 cup

Vegetable oil-1/4 cup

Sugar- ½ cup

Baking Powder – 1 tsp

Baking Soda – 1/2 tsp

Oranges -2

Orange juice (I used fresh squeezed) - 3/4 cup

Orange zest-1 tbsp

Chopped chocolate-100 gm

Chocolate chips-Handful


 

Method:

1. Preheat the oven to 180C (350F). Lightly grease baking pan.

2. Sift together the flour, baking soda and baking powder in a bowl.

 3.   In another bowl add the yoghurt, sugar and oil and mix well till combined.

4. Add the orange juice, orange zest and flour and Mix gently to incorporate the dry ingredients with wet ingredients and whisk till everything is well combined but do not over-mix the batter.

 

5 .Add in half of the chopped chocolate chunks and the chocolate chips and fold into the batter

 6.  Pour the batter into the prepared pan and tap the pan lightly on the countertop to remove any air bubbles. Add the remaining chocolate chunks and chocolate chips  and orange zest on the top of the batter.

7. Bake for about 25 minutes or till the cake tests done. (To test the cake insert a toothpick in the centre of the cake and if it comes out clean then cake is done and if batter sticks to the toothpick then bake for few more minutes.)

 

8.. Let it remain in the tin for 10 minutes, then turn it out onto a wire cooling rack.

 

9.. When the cake is completely cool Enjoy with a hot cup of tea or coffee!!

Mango Barfi/ Mango Fudge

 

Mango Barfi/ Mango Fudge

A melt in the mouth and a burst of sweet mango flavor, The mango barfi is made from mango pulp, Call it Mango Burfi or Mango Milk Fudge , you will surely love this dessert for its delightful flavors and ease of making it. Other than Mango Puree , milk powder forms the base of this fudge. It will be soft, chewy and melt-in-your-mouth and  it is a burst of sweet mango flavor, a perfect quick mithai make it for any celebrations at home.it is a treat for the mango lover. Today I made this sweet for Neividhyam  for Ashadha Navarathri !




 

So, do try this recipe and make the most of mangoes before the end of mango season.  Here’s the recipe for Mango Barfi

Ingredients

Mango Puree-    1 cup

Milk Powder-    ½ cup

Sugar-    ¼ cup

Ghee-    1 tbsp

Cardamom Powder-1/4 tsp

Silvered nuts for Decoration

 

Method:

1.Add fresh mango chunks to a blender jar and grind to a smooth paste. If needed, strain the pulp.

2.In a large non-stick pan add 1 tsp ghee and mango puree Cook on slow heat.

3.Then add the milk powder, sugar and mix thoroughly using a soft spatula. Cook on low heat, keep stirring. At first the mixture will look grainy. After 2-4 minutes the mixture will become smooth and feel soft.

4.Continue to cook on low heat for 10-15 minutes until the mixture starts leaving the sides of the pan;at this stage, add a pinch of cardamom and ½ tbsp of ghee. Stir and cook for a few minutes.

5.The mixture has left all the sides and has come in a dough form. Add ½ tbsp of ghee and mix it well. A ball can be formed; the mixture is ready.

 

6.Transfer the mixture to a greased tray and spread it evenly. Garnish with some sliced pistachios and spread evenly with a spatula. Cool down completely. Then Cut in the desired shape.

7.The Mango barfi is ready.Enjoy super-soft, delicious barfi any time of the day.

Notes:

Cooking the mango mixture until it starts to leave the sides of the pan is very important for the burfi to set properly.

The burfi mixture will not appear moist or runny, rather smooth and a bit fudgy.

If you pile up the burfi mixture in the center of the pan, it won't spread a lot or spread very slowly.

To check - Wet your bands and take a portion of the cooked burfi mixture. Try to roll into a small ball- you will be easily able to do so without the mixture sticking to your fingers

Eggless Mango Muffins

Mango Muffins are flavourful and super moist and so easy to make. They are loaded with mango flavour and roasted Almonds &pistachios which add crunch to these muffins. These muffins are super soft from inside and perfect brown from outside. Mango Muffins are cherishing delights for the family as a Teatime Snack!

Ingredients:

All-purpose flour/Maida- 1 cup

Mango Puree- 1 cup

Milk powder -3 tbsp

Baking powder -1tsp

Baking Soda -  1/2 tsp

Sugar – 1/2cup

Curd - 1/4 cup

Oil - 1/4 cup

Slivered-  Almonda/Pistachios

Vanilla essence-1 tsp

Milk-1/4 cup

Cardamom powder-1/2 tsp

 

Method:

Grease the muffins mould with oil or butter. Keep aside. Preheat oven @180° C

In a large mixing bowl add in the curd, sugar, oil, mango puree and vanilla essence. Whisk it together until well combined.

Place a sieve and add in the flour, milk powder, baking powder, baking soda, elaichi and sift them. Fold the wet and dry ingredients together.

 

Add 1/4 th cup chopped  Almonds &pistachios. Finally Add  3-4 tablespoons milk  to make a smooth batter. 

 

Gently fold the flour mixture without any lumps  Fill the muffin liners until ¾th with the batter, sprinkle slivered almonds& Pistachios on top and bake at 180°C for 20-25 mins. or until a skewer inserted comes out clean.

 

Remove from the oven and allow to stand for 5-10 minutes. Demould it and allow to cool down completely.  Enjoy!
